Avocado, tomato, sea salt, olive oil and a squeeze of lemon. So simple. So healthy. Because avocados are in season almost year around in Australia, these babies have become a bit of an early-summer staple around my house. I used to hate poor avos. Partly from texture, partly from taking my malaria pills on an empty stomach when I was 16, visiting Grandpa in Kenya, and then overindulging on avocados. (If you don’t know, taking malaria immunisation pills without food in your stomach equals vomiting.)
But somehow, maybe through years of abstinence, I’ve become extremely fond of avos. Go out and get some.
